| FRIED GREEN TOMATOES
With green tomatoes, try something that's very popular now. The bread crumbs take on a rich, golden color and become crisp, while the tomatoes inside stay firm but tender.
What You'll Need
- 6 medium-size green tomatoes, sliced 1/4 inch thick
- 1/2 cup all-purpose flour
- 2 beaten eggs
- 1 cup seasoned bread crumbs (season with salt, pepper, parsley, chopped onion, and dried oregano)
The Steps
- Dip tomato slices first in flour, then in egg, then in seasoned bread crumbs.
- Cook in a small amount of oil, in a large skillet, over medium heat, until lightly browned, about 3 minutes on each side. Tomatoes should be tender when pierced with a fork, but not overdone.
- Drain on a absorbent paper. Serve warm, with lemon wedges, if desired.
GARDEN FRESH VEGETABLE STIR-FRY
This delicious stir-fry takes only minutes to cook. It's a tasty accompaniment to broiled fish or chicken.
What You'll Need
- 3 medium carrots, cut diagonally into 1/4 inch slices (1 1/2 cups)
- 1 cup broccoli florets
- 1 garlic clove, minced
- 3 tablespoons water
- 1 1/2 cups pea pods1 medium red bell pepper, cut into 1/4 inch strips
- 1/4 cup chopped onion
- 1/4 teaspoon salt
- 1/4 teaspoon dried basil leaves
- Dash pepper
The Steps
- Spray large nonstick skillet or wok with nonstick cooking spray.
- Heat over medium-high heat until hot.
- Add carrots, broccoli, cauliflower and garlic: stir-fry 2 minutes.
- Add water, cover and cook 3 to 4 minutes until vegetables are crisp-tender.
- Add pea pods, bell pepper, onion, salt basil and pepper.
- Stir-fry about 2 minutes or until cooking liquid is almost absorbed and vegetables are crisp-tender. 4 (1-cup) servings
MACADAMIA NUT WAFFLES
Extremely simple! Serves four. There is no cooking of rice or blanching of peppers. Throw two or three meals' worth together at once and freeze the other in family portions.
What You'll Need
- 1 1/2 cups flour
- 2 1/2 teaspoon baking powder
- 1 1/4 cups milk
- 5 tablespoons butter, melted
- 1/3 cup finely chopped Macadamia nuts
- 2 tablespoon light brown sugar
- 1/4 teaspoon salt
- 3 eggs separated
- 1 teaspoon vanilla
The Steps
- Mix dry ingredients in a large bowl, add milk, egg yolks, butter and vanilla, mix until just blended.
- In a separate bowl beat egg whites to medium peaks.
- Gently fold into batter with nuts.
- Ladle into heated waffle iron and cook until golden brown.
- Serve hot with fresh Minnesota Syrup or your favorite fresh fruit.
